Zucchini Soup Cooking for 1 or 2 49814

4 cups sliced zucchini

1/4 cup chopped onion

1 clove garlic, chopped

1/2 cup beef broth

1/4 tsp. basil

Salt and pepper

1 slice bacon, cooked and crumbled, optional

Grated Parmesan cheese

 

Combine all ingredients except Parmesan cheese in a saucepan. Simmer about 20 minutes, or until zucchini is tender. Puree in a blender or food processor. Sprinkle with Parmesan cheese and serve hot.
