Summer Squash Casserole Cooking for  1 or 2  50326

   -----For 1-----

   1 cup summer squash, cubed

   1 tbs. Chopped onion

   1 tbs. Chopped green bell pepper

   1/4 cup grated cheddar cheese

   2 tbs. Sour cream

   3 tbs. Croutons

   -----For 2-----

   2 cups summer squash, cubed

   2 tbs. Chopped onion

   2 tbs. Chopped green bell pepper

   1/2 cup grated cheddar cheese

   1/4 cup sour cream

   6 tbs. Croutons

 

   Cook squash, onion and pepper in a small amount of water until just tender. Drain

   vegetables well. Combine with cheese, sour cream and of the croutons. Place in a

   buttered ramekin and top with remaining croutons. Bake in a 350-degree oven for 20

   minutes or until hot and bubbly.
