Spinach Salad Cooking for 1 or 2 49845

-----For One-----

½ bunch fresh spinach

¼ c. bean sprouts

¼ c. sliced mushrooms

1 hard-cooked egg, chopped

1 slice, or 1 tbsp. bacon, cooked and crumbled

½ green onion, sliced

-----For Two-----

1 small bunch fresh spinach

1/2 c. bean sprouts

1/2 c. sliced mushrooms

2 hard-cooked egg, chopped

2 slice, or 2 tbsp. bacon, cooked and crumbled

1 green onion, sliced

-----Sweet and Sour Dressing-----

2 tbsp. oil

½ tsp. sugar

1 tbsp. ketchup

1 tbsp. wine vinegar

½ tsp. Worcestershire sauce

Salt & pepper

-----Soy Sesame Dressing-----

2 tbsp. oil

1 tbsp. lemon juice

1 tsp. soy sauce

1 tbsp. toasted sesame seed

1 tsp. honey

½ clove garlic, crushed

Dash cayenne pepper, optional

Salt and pepper

 

Wash & dry spinach. Tear into bite-size pieces in a salad bowl. Add remaining ingredients. Combine ingredients for dressing of choice and mix well. (Dressing may be made ahead of time). Toss salad with dressing and serve immediately.
