   6 oz. beef sirloin

   2 tbs. Coarsely ground black pepper

   salt

   1 tbs. cognac

   1 tbs. Cream

   -----For 2-----

   12 oz. beef sirloin

   1/4 cup Coarsely ground black pepper

   salt

   2 tbs. cognac

   2 tbs. Cream

 

   Cut steak into serving pieces. Press pepper into meat. Sprinkle salt over bot-tom of a

   heavy skillet and place over high heat. When salt begins to brown, add steak and cook

   over high heat for several minutes. Turn steak, lower heat, and cook to desired doneness.

   Pour cognac over steak and ignite. When flames die, remove steak to a heated plate.

   Add cream to skillet and cook, stirring, until thickened. Pour sauce over steak.
