   1/3 lb. Lamb or Beef, cut into 1-inch cubes

   dash Thyme

   2/3 lb. Lamb or Beef, cut into 1-inch cubes

   LAMB MARINADE

   2 tbs. lemon juice

   1/4 cup olive oil

   1 clove garlic, chopped

   dash Thyme

   BEEF MARINADE

   1 tbs. red wine

   2 tbs. olive oil

   ½ garlic clove, chopped

   ½ bay leaf, crumbled

   -----For 2-----

   2 tbs. red wine

   1/4 cup olive oil

   1 garlic clove, chopped

   1 bay leaf, crumbled

   VEGETABLES

   mushrooms

   cherry tomatoes

   green, red or yellow bell pepper pieces

   pineapple chunks

   Zucchini chunks

   eggplant cubes

   onion wedges

 

   Trim fat from meat. Combine ingredients for desired marinade, add meat and marinate

   several hours or overnight in the refrigerator. Drain, reserving marinade, Select 2 or 3

   vegetables and thread on skewers, alternating with meat. Broil 4 inches from heat for 8

   minutes, or barbecue over hot coals for 10 minutes. Thin and baste with reserved

   marinade.
