   Half Recipe Single Crust Pastry

   1 Egg, Beaten

   ¼ C. Light Cream, Milk, Or Plain Yogurt

   1/4 Cup Swiss Or Cheddar Cheese,

   Grated

   1/4 Cup Meat, Poultry, Seafood

   Or Vegetables, Chopped

   Dash Dill, Basil Or Tarragon

   Salt

   -----For 2-----

   Whole Recipe Single Crust Pastry

   2 Egg, Beaten

   ½ Cup Light Cream, Milk, Or Plain Yogurt

   ½ Cup Swiss Or Cheddar Cheese,

   Grated

   Meat, Poultry, Seafood

   Or Vegetables, Chopped

   ¼ Tsp. Dill, Basil Or Tarragon

   Salt

 

   Line One Or Two 4½-Inch Tart Pans With Pastry. Prick Pastry Shells All Over With A

   Fork And Bake For 5 Minutes In A 4250 Oven. Beat Remaining Ingredients Together In

   A Mixing Bowl. Pour Into Pre-Baked Pastry Shells. Bake In A 350-Degree Oven For

   30 Minutes, Or Until Knife Inserted Into Center Comes Out Clean.

 

   Variation: Nuts Provide A Nice Contrast To The Creamy Texture Of Quiche. Substitute

   Any One Of These Combinations For The 1/2-Cup Cooked Chopped Meat Called For

   In The Preceding Recipe.

 

   2 Tbs. Sliced Almonds With 1/2 Cup Cooked, Chopped Chicken

   2 Tbs. Chopped Cashews With ½ Cup Cooked, Sliced Zucchini

   2 Tbs. Chopped Walnuts With ½ Cup Cooked, Sliced Broccoli
