Pocket Bread Sandwich From Cooking for 1 or 2 49827

-----For One-----

1 pita or pocket bread

1/2 c. thinly sliced cooked roast beef, chicken, or lamb

1/2 c. shredded lettuce or sprouts

2 tbsp. onion, chopped

1 small tomato, chopped

2 tbsp. plain yogurt or sour cream

1/4 to 1/2 c. chopped avocado or guacamole

-----For Two-----

2 pita or pocket breads

1 c. thinly sliced cooked roast beef, chicken, or lamb

1 c. shredded lettuce or sprouts

1/4 c. onion, chopped

1 large tomato, chopped

1/4 c. plain yogurt or sour cream

1/2 to 1 c. chopped avocado or guacamole

 

Cut pita bread in half to make 2 pockets. If desired, wrap pita in foil and warm in a 300-degree oven for 10 to 15 minutes. Stir together meat, lettuce, onion, tomato and yogurt. Spoon filling into pocket bread and top with avocado or guacamole.
