   1 quart water

   1/4 tsp. salt

   2 tsp. oil

   2 oz. uncooked pasta

   1 tbs. butter or olive oil, optional

   Grated Parmesan cheese, optional

   -----For 2-----

   2 quarts water

   1/2 tsp. salt

   1 tbs. oil

   4 oz. uncooked pasta

   2 tbs. butter or olive oil, optional

   Grated Parmesan cheese, optional

 

   Bring water, salt and oil to a rolling boil in a saucepan about twice the size a the amount of

   water called for. Add pasta and boil uncovered until tender, but pasta still offers a slight

   resistance to teeth when bitten (al dente) The cooking time will vary according to the type

   of pasta. Drain cooked pasta in a colander. Shake the colander until pasta is well drained,

   and do not rinse it. Toss with butter and grated cheese or Pesto, page 85, or top with a

   piping hot sauce. Serve immediately.
