MUFFINS from Cooking for 1 or 2  50318

   1/3 cup milk

   1 egg

   3 tbs. oil

   1 cup flour

   114 tsp. baking powder

   V4 tsp. salt

   2 tbs. sugar or honey

   -----VARIATIONS-----

   Stir 1 or more of the following ingredients into the batter before baking:

   1 tbs. cooked, crumbled bacon

   1 tbs. thinly sliced green onion

   1/4 cup shredded cheese

   1/4 cup chopped dates or nuts

   1/3 cup blueberries

   1 tsp. grated orange or lemon peel

   1/4 cup raisins and 1/2 tsp. cinnamon

   1/4 cup grated carrot or apple

 

   Stir dry ingredients together and make a well in the center. Combine liquid ingredients and

   add to dry ingredients. Stir until just moistened. Let sit for 1 minute. Fill greased or

   paper-lined muffin cups 2/3 full. Bake in a 400-Degree oven for 18 to 20 minutes or until

   golden brown.
