   1 lamb chop, well trimmed

   1/2 cup sliced zucchini

   1/2 cup chopped eggplant

   ½ clove garlic, chopped

   1 tbs. chopped onion

   1/4 cup Chopped tomato

   dash thyme

   dash basil

   Salt and pepper

   -----For 2-----

   2 lamb chop, well trimmed

   1 cup sliced zucchini

   1 cup chopped eggplant

   1 clove garlic, chopped

   2 tbs. chopped onion

   ½ cup Chopped tomato

   dash thyme

   dash basil

   Salt and pepper

 

   Place lamb chop on a square of aluminum foil. Top with remaining in-gredients. Bring

   ends of foil together and loosely fold to form package with opening at top to allow steam

   to escape. Bake in a 350-degree oven for 1 hour, or until meat is tender. If desired, meat

   and vegetables may be baked in a covered baking dish.
