Gazpacho From Cooking for 1 or 2 49809

1 tomato, peeled and quartered

1 can (12 oz.) tomato juice

2 tbs. chopped green bell pepper

2 tbs. chopped onion

1/2 cup chopped cucumber

1 clove garlic, minced

1 tbs. oil

1 tbs. wine vinegar

Salt and pepper

 

Combine all ingredients in a blender or food processor. Blend or process just until vegetables are pureed. Chill several hours or overnight. Makes 2 1/2 cups.
