GRILLED CHICKEN BREAST  1PERSON  50431

   1 or 2 chicken breast halves, boned and skinned

   1 tbs. olive oil

   salt and pepper

 

   Preheat broiler or prepare grill. Place chicken halves between 2 pieces of waxed paper

   and pound until thin. Brush with olive oil and sprinkle with salt and pepper. Place chicken

   under broiler or on grill for 3 minutes. Turn chicken over and broil for 3 additional

   minutes.

 

   VARIATIONS

   · Instead of olive oil and seasonings, brush chicken with a mixture of 2 tbs. honey mixed

   with 1 tbs. Dijon mustard.

   · For salt and pepper, substitute your favorite salt-free seasoning mix.

   · Replace olive oil with Italian dressing.

   · Instead of olive oil, sprinkle chicken with fresh lemon juice and dill.
