Onion Soup From Cooking for 1 or 249812

1 tbs. butter
1 medium onion, sliced
2 1/2 cups beef broth
Salt and pepper
2 slices toasted French
bread
1/4 cup grated Gruyere or
Swiss cheese
Melt butter in a small
saucepan over medium heat. Add sliced onion and Sauté until tender and golden
brown. Add broth and simmer 15 minutes.
Season with salt and pepper.
Place toast in 2 heatproof soup bowls and pour soup over toast. Sprinkle with
cheese. Place under broiler for a few minutes until cheese melts. Serves 2
