Coq Au Vin/Cooking for 1 or 2 50428

This classic French dish features chicken cooked in red wine.

 

-----For 1-----

1 tsp. Oil

2 tbs. Onion, Chopped

½ Clove garlic

¾ lb. Chicken pieces

1 ½ tsp. Flour

1 ½ tsp. Minced parsley

¼ Bay leaf

Pinch Thyme

Salt and pepper

½ Carrot, sliced

½ c. Mushrooms, fresh sliced

1 c. Red Wine

-----For 2-----

2 tsp. Oil

¼ c. Onion, Chopped

1 Clove garlic

1 ½ lb. Chicken pieces

1 tbs. Flour

1 tbs. Minced parsley

½ Bay leaf

1/8 tsp. Thyme

Salt and pepper

1 Carrot, sliced

1 c. Mushrooms, fresh sliced

2 c. Red Wine

 

Place oil in a skillet over medium-high heat. Sauté onion and garlic. Add chicken and brown well on all sides. Sprinkle with flour and seasonings. Add carrot, mushrooms and wine. Cover and simmer 1 hour. Remove bay leaf.
