   1½ Tsp. Butter

   1½ Tsp. Flour

   3 Tbs. Milk Or Light Cream

   1/3 Cup Grated Cheddar Cheese

   1 Egg Yolk

   Dash Nutmeg, Cayenne Pepper Or Dry Mustard

   Salt And Pepper

   1 Egg White

   -----For 2-----

   1 Tbs. Butter

   1 Tbs. Flour

   1/3 Cup Milk Or Light Cream

   2/3 Cup Grated Cheddar Cheese

   2 Egg Yolk

   Dash Nutmeg, Cayenne Pepper Or Dry Mustard

   Salt And Pepper

   2 Egg White

   -----VARIATIONS-----

   -----For 1-----

   1 Tbs. Minced Chives Or Green Onions

   2 Tbs. Chopped Cooked Vegetable

   2 Tbs. Chopped Cooked Meat, Poultry Or

   -----For 2-----

   2 Tbs. Minced Chives Or Green Onions

   1/4 Cup Chopped Cooked Vegetable

   1/4 Cup Chopped Cooked Meat, Poultry Or

   Melt Butter In A Saucepan Over Medium Heat. Stir In Flour And Let Bubble For 30

   Seconds. Add Milk And Cook, Stirring Until Thick. Add Cheese And Stir Until Melted.

   Remove From Heat. Mix In Egg Yolks, Seasonings And One Or More Varia-tions. Beat

   Egg Whites Until They Form Moist Peaks. Fold Egg Whites Into Yolk Mixture. Spoon

   Into One Or Two 10-Oz. Soufflé Dishes And Bake 20 Minutes In A 350-Degree Oven.

   Serve Immediately.
