CREAM OF VEGETABLE SOUP From Cooking for 1 or 2 49815

Choose one of these light and nutritious soups to start a meal or accompany a sandwich. They are equally delicious served cold.

 

SOUP BASE

 

1/2-cup milk or light cream

1/2 c. chicken broth

1 tbs. chopped onion

Salt and pepper

VARIATIOMS:

CREAM OF BROCCOLI SOUP

Add 2 cups chopped broccoli

and a dash of cayenne pepper

CREAM OF CARROT SOUP

Add 1 cup peeled and sliced carrots and a dash of nutmeg

CREAM OF POTATO SOUP

Add 1 cup peeled and cubed potatoes

1 tsp. chopped parsley

 

Combine chicken broth, onion, vegetable and seasonings in a saucepan Bring to a boil. Reduce heat, cover and simmer 10 to 15 minutes, or until vegetable is tender. Pour into a blender or food processor. Add cream and (blend until smooth. Serve hot or cold.
